In 2002, I took a two-week tour of the Shetlands and Orkneys with Island Holidays, a UK company. It was a good program. It emphasized birding, but not too much. The company is still in business, though its itineraries have changed somewhat. I don't know if they also do the Faroes, but it would be worth asking. If you discover a good option for the Faroes, please post what you learned. I'm interested in going there myself.
